Tender, caramelized carrots and soft, jammy apples coated in a tangy-sweet maple Dijon glaze. This easy side dish is perfect for busy weeknights or holiday dinners.

Ingredients

Scale
  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 2 medium apples (Honeycrisp, Fuji, or Granny Smith), cored and cut into wedges
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • ½ teaspoon fine sea salt or kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme, chopped (plus extra for garnish)
  • Optional: 1 sprig fresh rosemary

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. Peel the carrots and cut them into 2-inch pieces. If thick, halve lengthwise for even cooking.
  3. Core the apples and cut into wedges about ½-inch thick at the widest part. Leave the skin on.
  4. In a medium mixing bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and black pepper until smooth and emulsified.
  5. Add the carrot pieces and apple wedges to the bowl. Toss with a spatula or your hands until evenly coated. Add the chopped thyme and toss once more.
  6. Spread the carrots and apples in a single layer on the prepared baking sheet. Avoid overlapping. Tuck the rosemary sprig in among the pieces if using.
  7. Roast for 25-30 minutes, flipping halfway through (at about 12-15 minutes), until carrots are tender and apples are soft and slightly jammy at the edges.
  8. Optional: For extra caramelization, switch the oven to broil for the last 2-3 minutes. Watch closely to prevent burning.
  9. Remove from the oven and let rest for 2 minutes. Garnish with fresh thyme leaves and a pinch of flaky sea salt if desired. Serve warm.

Notes

For even cooking, cut carrots and apples uniformly. Flip halfway through roasting. If apples get too soft before carrots are done, remove them from the pan and let carrots finish alone. Use real maple syrup for best flavor. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 5-7 minutes or in a skillet over medium heat.
