Reuben tacos - featured image

These Savory Reuben Tacos take everything you love about a classic Reuben sandwich—salty corned beef, tangy sauerkraut, creamy dressing, and melty Swiss cheese—and wraps it all in a warm, crunchy corn tortilla. It’s comfort food, but faster and way more fun to eat.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 works best)
  • 1/2 cup finely diced yellow onion
  • 2 cloves garlic, minced
  • 1 teaspoon caraway seeds (optional)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons pickle juice
  • 8 small corn tortillas
  • 1 cup sauerkraut, drained and squeezed dry
  • 1 cup shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Prep the sauerkraut: Open your bag or jar of sauerkraut and place it in a small bowl. Use your hands or a clean kitchen towel to squeeze out as much liquid as possible. Set aside.
  2. Cook the beef: Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and break it apart with a spoon. Cook for 4-5 minutes, until browned and no longer pink. Leave about a tablespoon of fat in the pan.
  3. Add aromatics: Push the beef to one side of the pan. Add the diced onion and cook for 2 minutes, until softened. Add the minced garlic and cook for 30 seconds, until fragrant. Stir everything together.
  4. Season the meat: Sprinkle the caraway seeds, smoked paprika, salt, and pepper over the beef. Stir well. Pour in the Worcestershire sauce and pickle juice. Let it bubble for 1 minute, scraping up any browned bits from the bottom of the pan. Remove from heat.
  5. Warm the tortillas: In a separate dry skillet or the same one (wiped clean), heat the corn tortillas over medium heat for about 30 seconds per side, until pliable with a few light brown spots. Alternatively, wrap them in a damp paper towel and microwave for 30 seconds.
  6. Assemble the tacos: Lay the warm tortillas flat on a plate. Divide the beef mixture evenly among them. Top each with a generous pinch of the squeezed sauerkraut, followed by a sprinkle of shredded Swiss cheese. Drizzle with Thousand Island dressing.
  7. Melt the cheese (optional): Place the assembled tacos on a baking sheet and broil for 1-2 minutes, just until the cheese melts. Watch carefully so the tortillas don’t burn.
  8. Garnish and serve: Sprinkle the chopped fresh dill over the top. Serve immediately while the shells are still warm and crispy.

Notes

Don’t skip squeezing the sauerkraut to avoid soggy tacos. Toast tortillas properly for best flavor. Use pickle juice for acidity and brightness. Serve immediately for best texture. Store cooked beef filling separately for up to 3 days in the refrigerator or freeze for up to 3 months.
