A quick and easy mocktail made with frozen blueberries, coconut cream, and lime juice. Creamy, tart, and naturally sweet, it’s the perfect refreshing drink for hot days.

  • 1 cup (150g) frozen blueberries
  • ½ cup (120ml) coconut cream
  • ½ cup (120ml) unsweetened coconut milk
  • 2 tablespoons (30ml) fresh lime juice
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • ½ cup (120ml) sparkling water or club soda
  • 1 cup (about 150g) ice cubes
  • Optional garnish: fresh mint sprig, lime wheel, or a few whole blueberries on a skewer

Instructions

  1. Prep the blueberries: Take 1 cup of frozen blueberries out of the freezer. If you want a deeper color, put them in a small bowl and gently press them with the back of a spoon a few times. Don’t mash them completely—you want some whole berries left.
  2. Mix the coconut base: In your glass, combine ½ cup coconut cream and ½ cup unsweetened coconut milk. Stir until smooth. It might look a little separated at first—that’s normal. Just keep stirring.
  3. Add the lime and sweetener: Squeeze in 2 tablespoons of fresh lime juice. Add 1 tablespoon of maple syrup or honey if you’re using it. Stir again.
  4. Add the blueberries: Drop the frozen blueberries into the glass. They’ll start releasing color immediately, swirling into the coconut mixture. Don’t stir too much here—you want those streaks of purple and white.
  5. Add the ice: Fill the glass with ice cubes. The frozen blueberries already help keep things cold, but the ice adds that satisfying chill.
  6. Top with sparkling water: Pour in ½ cup of sparkling water or club soda. Pour slowly so it doesn’t foam over.
  7. Stir gently and garnish: Give it one or two gentle stirs. Add a sprig of mint, a lime wheel, or a few extra blueberries on a toothpick. Serve immediately.

Notes

Don’t stir too vigorously after adding the sparkling water, or you’ll lose the fizz. A gentle swirl is all you need. If serving at a party, make the coconut base ahead of time and keep it in the fridge. Then just assemble when guests arrive.
