This oatmeal cookie cold brew is a quick and easy iced coffee that tastes like a cookie in a glass. Made with oat milk, cinnamon, vanilla, and brown sugar, it’s a cozy, refreshing treat perfect for warm days.

Ingredients

Scale
  • 1 cup cold brew concentrate (or 1 ½ cups strong brewed coffee, cooled)
  • Ice cubes
  • ½ cup oat milk (unsweetened or original)
  • 1 tablespoon brown sugar (light or dark)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • Pinch of salt (optional)
  • Cinnamon stick (optional, for garnish)
  • Whipped cream (optional, for garnish)
  • Crushed oatmeal cookies (optional, for garnish)

Instructions

  1. In a small bowl or directly in your glass, combine 1 tablespoon of brown sugar with 1 tablespoon of warm water. Stir until the sugar is fully dissolved.
  2. Add ¼ teaspoon of ground cinnamon and ½ teaspoon of vanilla extract to the same glass. Stir until well combined.
  3. Pour in ½ cup of oat milk and stir gently to combine with the sugar and spice mixture.
  4. Fill the glass with ice cubes until almost full (about 6-8 standard cubes).
  5. Pour 1 cup of cold brew concentrate over the ice (or 1 ½ cups strong brewed coffee).
  6. Stir gently with a long spoon or cinnamon stick. Taste and adjust sweetness or cinnamon as desired.
  7. Garnish with whipped cream, a sprinkle of cinnamon, or crushed oatmeal cookies if desired. Serve immediately.

Notes

For a stronger cookie flavor, let the oat milk and cinnamon mixture sit for 5 minutes before adding the coffee. If using homemade cold brew, ensure it’s smooth and low-acid. Adjust sweetness to taste. The oat milk mixture can be made ahead and stored in the fridge for up to 3 days.
