These buttery, chewy white chocolate blondies are quick and easy to make in one bowl with simple ingredients. Perfect for last-minute cravings, they feature golden edges, soft centers, and pools of melted white chocolate.

Ingredients

Scale
  • ½ cup (1 stick) unsalted butter
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour, spooned and leveled
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Melt the butter in a medium saucepan over low heat. Let cool for 2-3 minutes. Optionally, brown the butter slightly by cooking an extra minute until golden and nutty.
  3. In a large bowl, whisk together melted butter, light brown sugar, and granulated sugar until smooth and well combined. Let sit for 1 minute.
  4. Add the egg and vanilla extract. Whisk vigorously for about 30 seconds until thick, glossy, and slightly lighter in color.
  5. In a small bowl, whisk together flour, baking powder, and salt.
  6. Pour the flour mixture into the wet mixture. Fold gently with a spatula until just combined—do not overmix.
  7. Gently fold in ¾ cup of white chocolate chips. Reserve ¼ cup for topping.
  8. Spoon batter into prepared pan and spread evenly. Sprinkle reserved white chocolate chips on top, pressing in lightly.
  9. Bake for 22-25 minutes. Edges should be golden brown and set; center will look slightly soft and puffy. A toothpick inserted near center should come out with a few moist crumbs.
  10. Cool in pan on a wire rack for at least 15 minutes. Use parchment overhang to lift out and transfer to rack to cool completely before slicing.

Notes

For extra gooey blondies, underbake by 2 minutes and cool completely in the pan. Letting the batter rest for 5 minutes before baking helps create a crackly top. Use room temperature egg to prevent butter from seizing. Measure flour by spooning and leveling to avoid dense blondies.
