  • 2 tablespoons honey

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 jalapeño, seeded and finely chopped (keep seeds for more heat)
  • 1/4 teaspoon black pepper
  • 2 large ripe but firm peaches, cut into 1.5-inch chunks
  • 12 jalapeños, sliced into thick rings
  • 1/2 red onion, cut into 1-inch chunks
  • Wooden or metal skewers (if wooden, soak in water for at least 30 minutes)
  • Fresh cilantro, chopped (for garnish, optional)
  • Lime wedges (for garnish, optional)
  • Flaky sea salt (for garnish, optional)

Instructions

  1. Make the Marinade: In a medium bowl, whisk together the soy sauce, honey, olive oil, minced garlic, grated ginger, chopped jalapeño, and black pepper. Taste and adjust heat if desired.
  2. Marinate the Chicken: Add the cubed chicken thighs to the bowl with the marinade. Toss to coat. Cover and let sit at room temperature for 15-20 minutes, or refrigerate for up to 2 hours.
  3. Prep the Skewers: While chicken marinates, thread ingredients onto skewers, alternating chicken, jalapeño slices, peach chunks, and red onion. Leave about an inch of space on each end and don’t pack too tightly.
