  • 1 3/4 cups (220g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon (for batter)
  • 1 tablespoon ground cinnamon (for swirl)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/3 cup (80g) plain Greek yogurt or sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, letting edges hang over sides.
  2. Peel and core both apples. Grate one apple using the large holes of a box grater into a clean kitchen towel or paper towels. Squeeze out excess liquid. Chop the second apple into small 1/4-inch cubes. Set aside.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, 2 teaspoons cinnamon, and nutmeg (if using).
  4. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla extract and Greek yogurt until combined.
  5. Fold grated and chopped apples into the wet mixture with a spatula.
