Ingredients

Scale
  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • ¼ teaspoon salt
  • ½ cup (113g) cold unsalted butter, cubed
  • 1 teaspoon vanilla extract
  • 8 ounces (226g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • 3 cups (about 12 ounces) fresh or frozen cranberries
  • ¾ cup (150g) granulated sugar
  • 1 tablespoon orange zest
  • 2 tablespoons orange juice
  • 1 tablespoon cornstarch
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish.
  2. Make the crumb mixture: In a medium bowl, whisk together flour, ½ cup granulated sugar, brown sugar, and salt. Cut in cold butter and 1 teaspoon vanilla until mixture resembles coarse meal with pea-sized butter pieces. Reserve 1 cup for topping.
  3. Press remaining crumb mixture firmly into bottom and up sides of prepared pie dish. Place on a baking sheet.
  4. Blind bake crust for 12 minutes until set and just starting to turn golden. Remove and set aside to cool slightly.
  5. Make cream cheese layer: Beat softened cream cheese, ¼ cup granulated sugar, egg yolk, and ½ teaspoon vanilla until smooth and creamy.
  6. Cook cranberry filling: In a saucepan, combine cranberries, ¾ cup granulated sugar, orange zest, orange juice, cornstarch, and cinnamon. Cook over medium heat, stirring frequently, for 8-10 minutes until thickened and jammy. Remove from heat and cool 5 minutes.
  7. Assemble pie: Spread cream cheese mixture evenly over bottom of partially baked crust. Pour warm cranberry filling over cream cheese layer. Sprinkle reserved crumb topping evenly over filling.
  8. Bake for 30-35 minutes until topping is deep golden brown and filling bubbles around edges. Tent with foil if browning too quickly.
  9. Cool completely on a wire rack for at least 3 hours before slicing.

Notes

Keep butter cold for crumbly topping. Do not overmix cream cheese. Let pie cool completely before slicing. For best flavor, make a day ahead.
