  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon

  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups ripe pears, peeled, cored, and diced into ¼-inch cubes (about 2 medium pears)
  • ¼ cup plain yogurt or sour cream
  • ½ cup powdered sugar, sifted
  • 2 tablespoons honey
  • 12 tablespoons milk or cream
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In a large bowl, whisk melted butter and sugar until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla and yogurt or sour cream until smooth and glossy.
  4. Add dry ingredients to wet ingredients in two additions, folding gently with a spatula until just combined. Do not overmix.
  5. Gently fold diced pears into the batter until evenly distributed.
  6. Pour batter into prepared loaf pan and spread evenly. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let bread cool in pan for 15 minutes, then lift out using parchment overhang and transfer to a cooling rack. Cool completely before glazing (about 1 hour).
  8. For the glaze: In a small bowl, whisk together powdered sugar, honey, and 1 tablespoon milk. Add more milk a teaspoon at a time until drizzling consistency. Stir in cinnamon if desired.
  9. Once bread is completely cool, drizzle glaze over the top. Let set for about 10 minutes before slicing.

Notes

Don’t overmix the batter to avoid a dense loaf. Check oven temperature if bread browns too quickly. Dice pears into small, uniform cubes. Room temperature ingredients help ensure a smooth batter. Use parchment sling for easy removal. Bread tastes even better on day two.
