  • 1 tablespoon olive oil
  • 2 teaspoons Cajun seasoning
  • 1 lb (450 g) smoked sausage or andouille sausage, sliced into rounds
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1 1/2 cups (170 g) shredded sharp cheddar cheese
  • 1/2 cup (60 g) shredded Monterey Jack cheese
  • 3 green onions, sliced thin
  • Optional: pickled jalapeños
  • 1/2 cup (120 g) sour cream
  • 2 tablespoons mayonnaise
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). Spread the frozen fries in a single layer on your baking sheet. Drizzle with olive oil and sprinkle with 2 teaspoons of Cajun seasoning. Toss everything together with your hands until the fries are evenly coated. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  2. While the fries are baking, start the dirty meat topping. Heat your skillet over medium-high heat. Add the sliced sausage and cook for 3-4 minutes, stirring occasionally, until the sausage starts to brown and get crispy edges. Don’t overcrowd the pan — work in batches if needed.
  3. Add the onion and bell pepper to the skillet with the sausage. Cook for another 4-5 minutes, stirring often, until the vegetables soften and start to caramelize. Add the minced garlic, 1 teaspoon Cajun seasoning, and smoked paprika. Stir and cook for 1 more minute until fragrant. Remove from heat and set aside.
  4. Make the creamy Cajun sauce. In a small bowl, combine the sour cream, mayonnaise, 1 teaspoon Cajun seasoning, garlic powder, and lemon juice. Whisk until smooth. Taste and adjust seasoning — you want it bold but balanced. Cover and refrigerate until ready to use.
  5. Assemble the loaded fries. Once the fries are crispy, remove the baking sheet from the oven. Sprinkle the shredded cheddar and Monterey Jack evenly over the hot fries. Spoon the sausage and vegetable mixture on top of the cheese. Return the baking sheet to the oven for 3-5 minutes, just until the cheese is fully melted and bubbly.
  6. Finish and serve. Remove from the oven and drizzle the creamy Cajun sauce over the top. Sprinkle with sliced green onions and pickled jalapeños if using. Serve immediately while everything is hot and gooey.
