These buttery tuna rice muffins are a quick and easy 30-minute recipe that transforms leftover rice and canned tuna into crispy, golden, and savory muffins. Perfect for meal prep, lunchboxes, or a satisfying snack.

Ingredients

Scale
  • 2 cups cooked white rice (leftover preferred)
  • 2 cans (5 oz each) canned tuna, drained
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 cup shredded cheddar cheese
  • ½ cup panko breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Generously grease a 12-cup muffin tin with melted butter or non-stick spray.
  2. In a large mixing bowl, combine cooked rice and drained tuna. Use a fork to break up any clumps and flake the tuna.
  3. Add melted butter, eggs, shredded cheddar cheese, panko breadcrumbs, salt, pepper, and garlic powder. Stir until fully combined. The mixture should be cohesive and slightly sticky. If too dry, add a tablespoon of milk or water; if too wet, add another tablespoon of breadcrumbs.
  4. Fold in fresh parsley if using.
  5. Spoon the mixture evenly into the prepared muffin cups, pressing down gently with the back of a spoon to compact.
  6. Bake for 20-25 minutes, until tops are golden brown and edges look crispy. Let cool in the tin for 5 minutes, then run a knife around edges and transfer to a wire rack.
  7. Serve warm or at room temperature.

Notes

Use day-old rice for best texture. Don’t overmix the batter. Let muffins cool in the tin for 5 minutes before removing to prevent crumbling. For a gluten-free version, use gluten-free panko or almond flour. For dairy-free, use plant-based butter and dairy-free cheese.
