Instructions

  1. Caramelize the onions: Slice both onions in half from root to tip, then cut into thin half-rings. Melt the butter in a large skillet over medium heat. Add the onions and stir to coat. Cook for about 20-25 minutes, stirring every 3-4 minutes, until they turn deep golden brown and smell sweet. If they start sticking, add a tablespoon of water and scrape the bottom.
  2. Preheat the oven to 375°F (190°C).
  3. Mix the base: In a medium bowl, combine the softened cream cheese, sour cream, and mayonnaise. Beat with a hand mixer or stir vigorously until smooth. Fold in the mozzarella, Parmesan, garlic powder, smoked paprika, cayenne, salt, and pepper.
  4. Combine and transfer: Let the caramelized onions cool for about 5 minutes. Fold them into the cream cheese mixture until fully incorporated. Scrape everything into an 8×8 baking dish and spread evenly.
  5. Bake until bubbly: Place the dish in the preheated oven and bake for 20-22 minutes, until the edges are golden and bubbling. For a browned top, switch to broil for the last 2 minutes, watching closely.
  6. Garnish and serve: Remove from the oven and let rest for 5 minutes. Sprinkle chopped chives or green onions over the top. Serve warm with sturdy chips, toasted baguette slices, or fresh veggie sticks.
