- 2 cups boiled and mashed potatoes
- 1/2 cup boiled green peas
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon grated ginger
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon amchur (dry mango powder)
- Salt to taste
- 2 tablespoons chopped fresh cilantro
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- Water as needed
- Oil for frying
Instructions
- In a pan, heat a little oil and add cumin seeds until they splutter.
- Add chopped onions, green chilies, and grated ginger; sauté until onions are translucent.
- Add boiled peas and mashed potatoes to the pan.
- Mix in garam masala, turmeric, red chili powder, amchur, and salt.
- Cook the mixture for 5 minutes, stirring occasionally.
- Remove from heat and stir in chopped cilantro. Let the filling cool.
- In a bowl, mix all-purpose flour and salt. Add water gradually to make a firm dough.
- Divide the dough into equal portions and roll each into a small circle.
- Place a spoonful of filling in the center of each circle, fold and seal the edges to form patties.
- Heat oil in a frying pan over medium heat.
- Fry the patties until golden brown and crispy on both sides.
- Drain on paper towels and serve hot.
Notes
Ensure the dough is firm but pliable to avoid breaking while frying. Adjust spice levels to taste.
