  • 1 (16-ounce) package potato gnocchi
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cups fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley or basil, chopped (for garnish, optional)
  • Extra Parmesan (for garnish, optional)

Instructions

  1. Melt the butter in a large skillet over medium-high heat until shimmering.
  2. Add the gnocchi directly to the skillet in a single layer. Cook undisturbed for 3-4 minutes until golden brown on the bottom. Flip and cook another 2-3 minutes until most sides have some color.
  3. Push the gnocchi to one side of the pan. Add the minced garlic to the empty space and cook for about 30 seconds until fragrant, stirring constantly.
  4. Pour in the heavy cream. Stir everything together, scraping up any browned bits from the bottom of the pan. Let the cream simmer gently for 2-3 minutes until it starts to thicken slightly.
  5. Add the spinach in handfuls, stirring until wilted, about 1 minute. Add red pepper flakes if using.
  6. Remove the pan from heat. Stir in the freshly grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  7. Serve immediately, topped with extra Parmesan and fresh herbs if desired.

Notes

For best results, grate Parmesan from a block rather than using pre-shredded. Add cheese off the heat to prevent clumping. If sauce is too thick, add a splash of milk or pasta water. If too thin, simmer a minute longer. For a lighter option, use half-and-half instead of heavy cream.
