  • 1 teaspoon (5ml) lemon juice
  • 1 tablespoon (15ml) honey or maple syrup (optional, for strawberry layer)
  • 2 tablespoons (15g) graham cracker crumbs
  • 1 teaspoon (5g) melted butter or coconut oil
  • 1/2 teaspoon brown sugar (optional)
  • Fresh strawberry slices (for garnish, optional)
  • Whipped cream or coconut cream (optional)
  • White chocolate shavings (optional)

Instructions

  1. Make the strawberry jam: In a small bowl, mash the chopped strawberries with lemon juice and honey (if using) using a fork or potato masher until desired consistency. Let sit while preparing the yogurt base.
  2. Prepare the cheesecake yogurt base: In a medium bowl, combine softened cream cheese, honey or maple syrup, vanilla extract, and salt. Cream together until smooth. Add Greek yogurt and fold gently until incorporated. Adjust sweetness to taste.
  3. Make the graham cracker crumble: In a small skillet over medium heat, melt butter. Add graham cracker crumbs and brown sugar (if using). Stir for 1-2 minutes until golden and fragrant. Remove from heat and let cool. Alternatively, mix crumbs with melted butter in a bowl.
  4. Assemble the bowl: Spoon the cheesecake yogurt base into a serving bowl. Swirl in about half of the strawberry jam. Sprinkle graham cracker crumble on top. Add fresh strawberry slices and any optional toppings.
  5. Serve immediately for best texture. For meal prep, store components separately and assemble just before eating.

Notes

For best texture, use thick Greek yogurt. If yogurt is watery, strain through cheesecloth for 15 minutes. Soften cream cheese to room temperature for smooth blending. For a dairy-free version, use coconut yogurt and dairy-free cream cheese. Store components separately for meal prep: yogurt base (up to 4 days), strawberry jam (up to 1 week), crumble (3 days at room temperature).
